This juicy meatloaf is a super easy midweek meal to prepare when time is not on your side. Meatloaf is a worldwide loved dish but each country puts their own delicious spin on it.

South African meatloaf is made with the best quality South African beef mincemeat. South Africa is known for its good quality meat products after all!

Streaky bacon packed on the outside of the meatloaf locks all the moisture inside ensuring that the meatloaf is juicy and tender on the inside and crispy on the outside.

Pair this juicy meatloaf with crispy cauliflower and baby gem squash for a quick and easy dinner packed with goodness.

If you have any leftovers, keep it in an airtight container or wrap it tightly with aluminium foil. It will keep well in the fridge for 3-4 days.

Ingredients

  • 750 g beef mince 

  • bunch spring onions, chopped 

  • 2 eggs

  • 2 tablespoons coconut flour 

  • salt and pepper to taste

  • 1 pack streaky bacon

  • tomato sauce

Method

  • Preheat the oven to 200°C.
  • Line 2 small bread pans with the bacon.
  • Mix the rest of the ingredients well with your hands and divide the mixture into the 2 bread pans. Press the mixture down and make it level.
  • Bake the meatloaves in the preheated oven for 20 minutes. Remove from the bread pans, turn over into another dish with the bacon side up and brush with the BOTG tomato sauce.
  • Grill for 5 minutes or until brown and crispy.
