This peanut choc chip cookies recipe comes together quickly and easily. Within 30 minutes you can have your teatime snacks prepared and baked spreading their seductive flavour throughout your home.

This recipe is enough for 30 cookies. So, if you have some hungry teenagers around, maybe double your recipe and keep the extra batch in an extra cookie jar for when the first one has finished.

Ingredients

  • 125 g butter

  • 40 g icing sugar

  • 2.5 ml vanilla essence

  • 100 g cake flour

  • 75 g peanut flour

  • 40 g cornflour

  • 100 g dark choc chips

  • 100 g toasted peanuts

  • pinch of salt

Method

  • Preheat the oven to 170°C.
  • Grease a baking tray.
  • Using an electric mixer, beat the butter and sugar together until pale yellow. Add the vanilla essence.
  • Add the flour, peanut flour and cornflour. Beat until combined.
  • Add the chocolate chips, peanuts and salt.
  • Form little balls out of the dough. Flatten a little with your hands.
  • Bake for about 15 to 20 minutes.
