Quick and Easy Fruit and Nut Chocolates


When you started growing inside me I felt apprehension like nothing I had ever known.
Weeks later I felt sickness like nothing I had ever known.
When I gave birth to you I felt pain like nothing I had ever known.
When I first held you I felt love like nothing I had ever known.
When I took you home I felt sleep deprivation like nothing I had ever known.
During those weeks I felt the craziness of hormones like nothing I had ever known.
As I tried to feed you I felt frustration and hopelessness like nothing I had ever known.
In those first few months I felt clueless like nothing I had ever known.
Then you smiled and I felt my heart burst like nothing I had ever known.
You kissed me and I felt warmth like nothing I had ever known.
You had your first illness and I felt my heart break like nothing I had ever known.
You took your first steps and said your first words and I felt pride like nothing I had ever known.
You packed your bag and headed to school and I felt excitement, emptiness and a sense of worry like nothing I had ever known.
You stand before me now. So grown up. So beautiful. I feel all of these things at once; mothering you is like nothing I had ever known.

Quick and Easy Fruit and Nut Chocolates

  • 6 tablespoons almond butter
  • 4 tablespoons cacao or cocoa
  • 2 tablespoons honey*
  • 2 tablespoons maple syrup
  • 4 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1/4 cup raisins
  • 1/2 cup dry roasted almonds, roughly chopped
  1. Place the ingredients into a bowl and stir until the mixture is smooth and well combined. Spoon the mixture into the holes of a mini silicon muffin moulds and place in the freezer to set.
  2. Eat and enjoy.

*you can use rice malt syrup or maple syrup if you prefer.
